Student Recipe: Corn Beef Hash

This was really easy and cheap to make, and it was a hit with all my flat mates. It’s great for warming you up when you get in from uni on a cold winters day!

 

Ingredients:

  • 1 large onion, peeled and chopped
  • 2 tbsp dripping, or oil
  • 500g/1lb 2oz corned beef or cooked salt beef
  • 1 tin chopped plum tomatoes, drained and juice reserved
  • 450g/1lb peas, blanched if fresh, thawed if frozen (tin ok)
  • 3 medium potatoes, cooked and mashed with a little butter
  • Optional: A dash of Worcestershire sauce, or Tabasco
  • Salt and pepper to taste

 

Method

  • Fry the onion in the dripping or oil, quite hard, for about 5 minutes. It is okay if it catches a little. Add the meat, tomatoes and peas to the onion and when it is all simmering away nicely season to your own level of saltiness (go very easy on the salt because of the meat). If the mixture seems dry by all means add the juice from the tomatoes.
  • Finally, fold the potatoes into the other ingredients and check the seasoning again. This is the point at which you can add the Worcestershire sauce if you like.
  • It’s nice to grill the corn beef hash until the top is golden brown. It makes a great hangover brunch served with poached or fried eggs on top. Tomato ketchup is also mandatory.
