Student Recipe: Omelette

So I don’t think I am self proclaimed cook, but I felt a bit run down from these Winter months, so I thought I would cook for myself and my housemate. I know, that is too kind of me.
I used Jamie Oliver’s Ministry of Food cook book, which is brilliant and the recipes are simple to follow. Omelettes are so easy to make, they take less than 10 minutes, and with the right ingredients, they really can make a delicious meal, which is also cheap.
Ingredients:
For each omelette you'll need:
- 2–3 large eggs
- Sea salt and freshly ground black pepper
- A small knob of butter
- Optional: A small handful of grated Cheddar cheese.
Method
- Crack the eggs into a mixing bowl with a pinch of salt and pepper. Beat well with a fork.
- Put a small frying pan on a low heat and let it get hot.
- Add a small knob of butter. When the butter has melted and is bubbling, add your eggs and move the pan around to spread them out evenly.
- When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese, if using (I sometimes grate mine directly on to the omelette).
- Using a spatula, ease around the edges of the omelette, then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette on to a plate.
Why not try adding some finely sliced sautéed mushrooms, some well cooked bacon and sweet corn, and sprinkle with some freshly cut coriander. Perfect for breakfast or a quick snack at lunch time.
