Ingredients:

  • 2kg Potatoes
  • I Large Onion
  • 2 stock cubes
  • Pkt 8 Sausages

 

Method

  • Peel the potatoes and chop into small pieces.
  • Chop up one large onion and put into an empty pot along with the potatoes and stock cubes.
  • Put the sausages in a separate pot, cover with cold water and bring to the boil.
  • Simmer for two minutes then empty and re-fill with cold water.
  • Peel skin off of sausages, chop into small pieces and add to pot containing onion, potato and stock. If you prefer to have the skin left on, just chop the raw sausage to bite size pieces and add to the pot with the potatoes, onion and stock cubes.
  • Half-cover the ingredients with cold water and bring to the boil.
  • Once boiled put the lid on the pot and reduce top simmer before covering and leaving to simmer for twenty minutes, stirring occasionally and adding water as necessary.

 

  • As an alternative, you can use corned beef instead of sausages. Prepare in the same way, adding a tin of chopped up corned beef instead of sausages.
